Summer is here, and bingsu season is back. The heat has been building steadily since May, and once summer arrives, I find myself ordering shaved ice pretty regularly.
It came with fresh watermelon chunks piled on top of milk-based shaved ice — a fairly standard presentation for this type of dessert.
The watermelon was definitely sweet. Watermelon quality can vary a lot depending on the season and where it's grown, so it's not always this good — but this one was genuinely delicious. When the fruit is this good, you don't need much else. I added some syrup anyway because I wanted it a bit sweeter, and it worked well.
Overall, it was a solid shaved ice. That's not really what watermelon bingsu is about, though. It was perfect for ordering in on a hot day when going outside didn't seem worth it. Summer is hot and humid and generally exhausting, but good fruit and cold desserts make it bearable.
